Wine gums, berries, and sour candies jump from this Sweetshop, which brings together Gaitania from Tolima and Sitio da Torre Obatã from Minas Gerais! Two takes on the natural process amp up the intensity of this fruit-forward blend.
New to us, welcome Gaitania from Planadas district in Tolima, Colombia. This lot begins with cherries from small-scale producers in Gaitania village (most own less than one hectare of coffee), many from the indigenous Nasa Wesx group. After picking, the coffee cherries are fermented in a low-oxygen environment for fifty hours before drying on raised beds. This style of fermentation gives Gaitania its signature (fruit) punch! Dessert-like flavours of concord grape and blueberry jam abound.
Álvaro Coli’s well-crafted natural process from Sitio da Torre is back in this Sweetshop, this time featuring the Obatã varietal. Álvaro’s careful, elongated drying process gives his coffees a particular flair, on display in this component’s strawberry notes. In classic Brazilian fashion, this lot also brings texture, depth, and deep chocolate tones to ground this fabulously fruity espresso.
